My favourite avocado variety 🥑 (the Shepard) is sadly coming to an end her in Australia, so I have been making the most of it before it’s over. This is my famous Guac, a delicious and nutritious recipe to add as an accompaniment to many different meals and is an excellent source of good fats to keep you fuller for longer. It will also help with milk production, and is packed full of essential nutrients to heal your postpartum body!
Ingredients:
- 4 large ripe avocados (my favourite as stated above are Shepard’s, I find them so creamy and flavourful)
- 1 small red onion or 2 spring onions
- 1 small spray free tomato
- Juice of half a lime
- Sea salt & pepper
Method:
- Remove avocado flesh from skin and seed and roughly mash in a medium size bowl (I like mine a little chunky)
- Dice onion and tomato and add to bowl with remaining ingredients
- Season to desired taste
- Enjoy as a dip with raw vegetables sticks, healthy corn chips, in tacos, or on your Mexican bowl!
