This deliciously warming coconut tapioca pudding recipe is a wonderful postpartum meal recipe, and really easy to make. You can substitute the coconut milk for milk of your choice of course, but I love the sweet creaminess and flavour of the coconut milk in this pudding.
Ingredients:
- 1/4 cup tapioca pearls
- 2.5 cups coconut milk or raw cow milk
- 1-2 tablespoons maple syrup or honey (depending on your sweetness preference)
- 1 tablespoon quality collagen powder
- 1 teaspoon vanilla bean paste/powder
- Fresh mango to serve
