Coconut Tapioca Pudding

This deliciously warming coconut tapioca pudding recipe is a wonderful postpartum meal recipe, and really easy to make. You can substitute the coconut milk for milk of your choice of course, but I love the sweet creaminess and flavour of the coconut milk in this pudding.

Ingredients:

  • 1/4 cup tapioca pearls
  • 2.5 cups coconut milk or raw cow milk
  • 1-2 tablespoons maple syrup or honey (depending on your sweetness preference)
  • 1 tablespoon quality collagen powder
  • 1 teaspoon vanilla bean paste/powder
  • Fresh mango to serve
