Ghee Mayonnaise

This is a delicious ghee based mayonnaise that not only tastes delicious, but is a very powerful nutrient source and is super simple to make! To learn more about Ghee’s health benefits, click here.

Ingredients:
1/2 Cup Grass Fed Ghee
1/2 Cup Olive Oil (I used garlic infused)
4 Free Range Egg Yolks (Organic preferred)
1 Tblsp Apple Cider Vinegar
1/2 Tsp Dijon Mustard
1/2 Tsp Seeded Mustard
1 Tsp Paprika
1/2 Tsp Cayenne Pepper (you can omit if you don’t like heat)
1 Tblsp Whey (see recipe here: Home Made Whey)
Squeeze of Lemon
Pinch Sea Salt & Pepper

Method:
1. Add all ingredients except the ghee, olive oil and whey to a food processor. Process for roughly a minute, or until well combined.
2. In a heat safe glass bowl or pouring jug add of ghee and warm over a pan of hot water until it liquifies, then add the olive oil to the ghee.
3. Turn the food processor back on with the egg yolk mixture and slowly pour in the ghee and olive oil. Ensure mix is emulsifying correctly, you should end up with a nice, thick mayonnaise once you’ve finished adding the ghee and oil.
4. Lastly, add the tablespoon of whey to the mix and process for another 30 seconds.
5. Store in a sterilised glass jar in the fridge for up to a 2 weeks.
